Remove outdated option lists for the hardware encoders. While we support some of the libavcodec hardware encoder options, many have caveats or have changed over time. As such, this information is dated. If someone wants to test and re-work this, feel free.

Update the deprecated or removed section to use slightly better
language, replacing "compatible" with "similar", as some of the
potentially suitable replacements going forward use higher peak frame
rates and other settings that might not be compatible with older
devices, despite otherwise being close alternatives.
